This year for Thanksgiving my food assignment is rolls. I'm so excited to make them because I FINALLY have my recipe perfected (in my mind anyway). Hopefully you will agree. I cannot tell you how many times I have adjusted and tweaked this recipe.
Homemade Honey Rolls
Ingredients
2 c. warm milk
2 Tbsp yeast
1 cup honey (substitute w/ sugar if needed)
2 tsp salt
1/3 c butter, room temp
1 egg
5 to 5 1/2 cups flour
Directions
Preheat your oven to the lowest temp (usually 170 or 175). Dissolve yeast in milk. Add honey, salt, butter, egg and 2 cups of flour. Mix 2 minutes. Add 2 more cups of flour, and mix 2 more minutes. Add 1 more cup of flour, and mix 2 more minutes. Add last 1/2 cup flour as needed to make a nice dough. Knead in mixer or by hand 2 more minutes. Place in greased metal bowl. Spray top of dough with cooking spray. Cover with a dry towel and place in oven. Important: Turn oven off right when you shut the oven. Let rise until double. Remove from oven and punch down. Shape dough as desire. Brush with melted butter. Place rolls in already warmed oven to rise. Right before they are the size you want turn the oven on 350 with your rolls still in the oven (as your oven preheats your rolls will continue to rise, and become nice and fluffy. Time your rolls in the oven for 10 to 12 minutes from the time you turn on your oven. Let cool and brush with butter.
